Braised Beef in Tomato and Herb Sauce

This is pure comfort food, simple ingredients doing extraordinary things with nothing more than time and patience.

Ingredients

  • 800 grams beef (chuck or braising steak), sliced
  • 800 grams crushed tomatoes (canned)
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 3 tablespoons olive oil
  • 120 grams fresh spinach or mixed greens
  • 1 cups fresh basil leaves, torn
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 teaspoons paprika
  • 0.5 teaspoons dried oregano
  • 150 milliliters beef broth or water
  • 1 bay leaf

Steps

Season the beef: Pat 800 grams beef (chuck or braising steak), sliced dry with paper towels and season all over with 1 teaspoons salt, 0.5 teaspoons black pepper, and 1 teaspoons paprika.2

Sear the beef: Heat 3 tablespoons olive oil in a wide, deep pan over high heat. Sear the beef slices in batches until browned on both sides. Remove and set aside.3

Cook the aromatics: Lower the heat to medium. In the same pan, add 1 large onion, finely chopped and cook until softened and golden. Add 4 garlic cloves, minced and stir for one minute until fragrant.4

Build the sauce: Pour in 800 grams crushed tomatoes (canned) and 150 milliliters beef broth or water. Add 0.5 teaspoons dried oregano and 1 bay leaf. Stir well and bring to a gentle simmer.5

Braise low and slow: Return the seared beef to the pan, nestling the pieces into the sauce. Cover with a lid and simmer on low heat, turning the meat occasionally.6

Add the greens: In the last 10 minutes 10:00

 of cooking, stir in 120 grams fresh spinach or mixed greens and 1 cups fresh basil leaves, torn. Let them wilt into the sauce. Taste and adjust seasoning.7

Serve: Remove the bay leaf. Serve the beef generously coated in sauce with your choice of side.
