Ingredients
For the Cookies:
✅ 1 ½ cups all-purpose flour
✅ 1 tsp baking soda
✅ ½ tsp salt
✅ 1 tsp cinnamon
✅ ¼ tsp nutmeg
✅ ½ cup unsalted butter, softened
✅ ½ cup brown sugar
✅ ¼ cup granulated sugar
✅ 1 large egg
✅ 1 tsp vanilla extract
✅ 1 cup finely grated carrots
✅ ½ cup rolled oats
✅ ½ cup chopped walnuts (optional)
✅ ½ cup raisins (optional)
For the Cream Cheese Frosting:
✅ 4 oz cream cheese, softened
✅ ¼ cup unsalted butter, softened
✅ 1 cup powdered sugar
✅ ½ tsp vanilla extract
Instructions
1️⃣ Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2️⃣ Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl. Set aside.
3️⃣ In another bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
4️⃣ Add in the egg and vanilla extract, mixing until well combined.
5️⃣ Stir in the grated carrots, oats, walnuts, and raisins (if using).
6️⃣ Gradually mix in the dry ingredients until fully combined.
7️⃣ Scoop dough onto the baking sheet, spacing 2 inches apart.
8️⃣ Bake for 10-12 minutes or until edges are golden brown. Cool completely.
9️⃣ For the frosting, beat cream cheese and butter until smooth.
🔟 Add powdered sugar and vanilla, then mix until creamy.
