
Cheesy Breakfast Sausage Casserole
Description
This cheesy breakfast sausage casserole is loaded with eggs, savory sausage, crisp red bell peppers, and melty cheddar cheese. It’s the perfect make-ahead breakfast for holidays, weekend brunches, or feeding a hungry family in one go.
Ingredients
1 lb breakfast sausage (pork or turkey)
6 large eggs
1 cup milk
3 cups frozen hash browns (thawed)
1 cup shredded cheddar cheese
1/2 cup diced red bell pepper
1/4 cup chopped green onions (optional)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
Directions
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish
In a skillet, cook the sausage over medium heat until browned and fully cooked. Drain any excess fat
In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder
Layer the thawed hash browns evenly in the prepared dish
Top with cooked sausage, red bell peppers, and half the cheese
Pour the egg mixture evenly over the top
Sprinkle the remaining cheese on top
Bake uncovered for 35–40 minutes, or until the eggs are set and the top is golden and bubbly
Let cool slightly before slicing. Garnish with green onions if using
