Ingredients
2 cups cooked white rice
1 (4 oz) can roasted green chiles, drained
1 ½ cups shredded cheddar cheese
½ cup shredded Monterey Jack cheese
½ cup sour cream
½ cup milk
1 small onion, finely diced
1 tablespoon butter
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Instructions
Preheat oven to 350°F (175°C). Lightly grease a baking dish.
In a skillet over medium heat, melt the butter and sauté the diced onion until soft and translucent, about 3–4 minutes.
In a large bowl, combine cooked rice, green chiles, sautéed onion, sour cream, milk, garlic powder, salt, pepper, and 1 cup of the cheddar cheese. Mix until evenly combined.
Spread the mixture into the prepared baking dish.
Top with remaining cheddar and Monterey Jack cheese.
