  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tsp paprika
  • 1/2 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  3. Add chopped onion and garlic, sauté until fragrant and softened.
  4. Stir in bell pepper, zucchini, and broccoli. Cook for 5–7 minutes until vegetables are tender.
  5. Add diced tomatoes, paprika, Italian seasoning, salt, and pepper. Stir well and let simmer for a few minutes.
  6. Reduce heat to low and sprinkle cheddar and mozzarella evenly over the skillet.
  7. Cover and let cook until the cheese is fully melted and bubbly.
