Ingredients
• 1 lb (450g) ground beef
• 1 small onion, diced
• 3 cups thinly sliced potatoes
• 1 cup frozen mixed vegetables (peas, carrots, corn)
• 1 cup shredded cheddar or mozzarella
• 1 can cream of mushroom or cream of chicken soup
• 1/2 cup milk
• 1 tsp garlic powder
• 1 tsp onion powder
• Salt and pepper to taste
• 1 tbsp butter (for greasing)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish with butter.
- In a skillet, cook the ground beef with diced onion until browned. Drain excess fat.
- Add mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir in the soup and milk and simmer 2–3 minutes.
- Spread half of the sliced potatoes on the bottom of the baking dish.
- Add all of the beef mixture on top, then sprinkle half the cheese.
- Top with remaining potatoes and finish with the remaining cheese.
- Cover with foil and bake 45 minutes.
- Remove foil and bake 15–20 minutes more until potatoes are golden and tender.
