“Very tender and flavorful, this recipe is one of our family’s favorites. It’s great to make ahead of time in the slow cooker and then serve over rice, egg noodles, or chow mein.”

🧂 Ingredients

•2 lbs beef sirloin or flank steak, thinly sliced into strips

•1 green bell pepper, sliced

•1 red bell pepper, sliced

•1 onion, sliced

•1 can (14.5 oz) diced tomatoes (with juice)

•1/4 cup low-sodium soy sauce

•2 tablespoons brown sugar

•2 teaspoons garlic powder

•1 teaspoon ground ginger

•1 tablespoon cornstarch

•1/4 cup water

•Optional: cooked white rice for serving

👩‍🍳 Directions

1.Layer Ingredients: Place the sliced beef, onions, and bell peppers into the Crock Pot.

2.Make the Sauce: In a bowl, mix together diced tomatoes (with juice), soy sauce, brown sugar, garlic powder, and ground ginger. Pour over the beef and veggies.

3.Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is tender.

4.Thicken the Sauce: In the last 30 minutes, stir together cornstarch and water. Add to the Crock Pot and stir gently. Let it cook for 30 more minutes until the sauce thickens.

5.Serve: Serve hot over white rice, noodles, or cauliflower rice.

 

How to:

In a large bowl, mix together the flour and season salt then coat the meat in the mixture.
In a skillet, heat the oil, add in the meat, minced garlic, bell peppers (cut into strips) and cook until the meat starts to brown.
Remove the meat and peppers from the skillet to a lined slow cooker leaving the grease behind.
In the skillet where we cooked the meat, add the stewed tomatoes with juice, and 1 can of beef broth to the oil.
Add the flour gradually while stirring until you make a gravy then pour it over the meat in the slow cooker.
Cook cover on low for 8 hours.
