Ingredients

  • 700g steak (sirloin, chuck, or stew meat), cut into bite-sized pieces
  • 5–6 medium potatoes, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 1/2 cup beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)
  • 2 tablespoons green onions (chopped, for garnish)

Instructions

  1. (Optional but recommended) Heat olive oil in a pan and quickly sear the steak pieces until browned for extra flavor.
  2. Add diced potatoes to the bottom of the crockpot.
  3. Layer the steak, onion, and garlic on top.
  4. Season with paprika, salt, pepper, and thyme.
  5. Pour beef broth evenly over everything.
  6. Cover and cook on low for 6–8 hours or high for 3–4 hours, until potatoes are tender and steak is soft.
  7. About 20 minutes before serving, stir in shredded cheddar cheese and half of the bacon.
  8. Once melted, top with remaining bacon, sour cream, and green onions.
