Key Lime Parfaits
🫒 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 🫒
1 ½ cups graham cracker crumbs
6 tablespoons unsalted butter, melted
1 cup cold heavy cream
12 ounces cream cheese, softened
1 cup sweetened condensed milk
½ cup freshly squeezed key lime juice (or regular lime juice)
For the Topping:
½ cup heavy cream
2 tablespoons confectioner’s sugar
Lime zest (for garnish)

Prepare the Graham Cracker Crust:
In a bowl, mix the 1 ½ cups graham cracker crumbs with the 6 tablespoons melted butter until thoroughly blended.
You can use your fingers for this step to ensure an even mix. Set aside.
Make the Key Lime Filling:
In a food processor, whip the 1 cup cold heavy cream until thick and holds its shape. Be careful not to over-whip.
Add the 12 ounces cream cheese, breaking it into chunks as you add it. Process until smooth.
Gradually add in the 1 cup sweetened condensed milk and ½ cup freshly squeezed key lime juice. Process until the mixture is smooth and creamy.
Assemble the Parfaits:
In each of the 6 parfait jars or glasses, layer the ingredients as follows:
Start with 2 tablespoons of the graham cracker mixture at the bottom.
Add about ¼ cup of the key lime mixture on top.
Repeat the layers with 2 more tablespoons of crumbs, followed by another ¼ cup of lime mixture.
Chill:
Cover the parfaits and chill in the refrigerator for at least 2 hours (or longer if desired) until ready to serve.
Prepare the Topping:
Before serving, whip the ½ cup heavy cream with the 2 tablespoons confectioner’s sugar until it reaches soft peaks.
Serve:
Top each parfait with whipped cream and garnish with lime zest.
