Oreo Brownie & S’mores Ice Cream Cake
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 🧂
Oreo Brownie Crust
½ cup unsalted butter 🧈
½ cup unsweetened cocoa powder 🍫
1 cup granulated sugar 🍚
2 eggs 🥚
1 teaspoon vanilla extract 🍦
½ cup all-purpose flour 🌾
1 teaspoon baking powder 🍞
¼ teaspoon salt 🧂
1 cup crushed Oreo cookies 🍪
Ice Cream Layer
½ gallon Tillamook Fireside S’mores Ice Cream 🍦
1 ½ – 2 cups mini marshmallows 🍬
½ cup crushed graham crackers 🍪
Chocolate Ganache
¼ cup heavy cream 🥛
½ cup semi-sweet chocolate chips 🍫
𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀 🧂
1. Oreo Brownie Crust
1️⃣ Preheat oven to 350°F (175°C). Spray the bottom of a 9-inch springform pan with non-stick spray.
2️⃣ Melt butter in a skillet over medium-low heat, then mix in cocoa powder and allow to cool for 10 minutes.
3️⃣ Whisk sugar into the cocoa mixture, followed by the eggs one at a time, then whisk in vanilla extract.
4️⃣ In another bowl, combine flour, baking powder, and salt. Slowly whisk this mixture into the cocoa mixture. Fold in crushed Oreos.
5️⃣ Spoon the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted comes out with just a few crumbs.
6️⃣ Remove from the oven and let the brownies cool completely.
2. Ice Cream Layer
7️⃣ Let the ice cream sit at room temperature for 20 minutes to soften.
8️⃣ Spread the softened ice cream over the cooled brownie crust.
9️⃣ Top with mini marshmallows and crushed graham crackers.
🔟 Freeze for at least 4 hours or overnight until set.
3. Chocolate Ganache
1️⃣1️⃣ Heat the heavy cream in the microwave for 30 seconds or until steaming. Stir in the chocolate chips. Let sit for 1 minute before stirring until smooth and shiny.
1️⃣2️⃣ Carefully remove the outer ring of the springform pan and drizzle the ganache over the ice cream cake.
