Ingredients
For the crust
1 1/2 cups graham cracker crumbs
1/3 cup granulated sugar
1/2 cup unsalted butter, melted
For the filling
16 oz cream cheese, softened
2/3 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup sour cream
For the topping
2–3 fresh peaches, thinly sliced
2 tablespoons granulated sugar
Instructions
Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 8–10 minutes, then let cool slightly.
In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla and sour cream until creamy.
Pour filling over the crust and smooth evenly. Arrange peach slices over the top and sprinkle with sugar.
Bake 35–40 minutes until center is set but slightly jiggly.
Cool completely at room temperature, then refrigerate at least 3 hours before slicing into bars.
