Potato Kielbasa Soup
Ingredients:
1 tablespoon olive oil
1 pound kielbasa, cut into ½ inch pieces
2 garlic cloves, minced
½ cup finely diced yellow onion
½ cup peeled and finely diced carrots (2 large carrots)
½ cup finely sliced celery (2-3 stalks)
4 cups chicken stock
1 1/2 pounds potatoes, cut into cubes
2 cups milk
2 cups shredded cheddar cheese
½ cup shredded parmesan cheese
½ teaspoon kosher salt
¼ teaspoon black pepper
¼ cup chopped parsley
Instructions:
Heat olive oil in a Dutch oven or soup pot over medium-high heat. Add the kielbasa and cook for 5-6 minutes, stirring frequently. Use a slotted spoon to remove the sausage from the pot and set it aside.
Add minced garlic, diced onions, carrots, and celery to the pot. Sauté for about 2 minutes until the vegetables are softened.
Pour in the chicken stock and add the cubed potatoes. Bring the mixture to a boil, then reduce the heat. Cover and simmer for 15 minutes or until the potatoes are tender.
Once the potatoes are cooked, return the cooked sausage to the pot. Add milk, shredded cheddar cheese, shredded parmesan cheese, kosher salt, and black pepper. Stir well to combine.
Allow the soup to simmer on low heat for an additional 5-10 minutes, stirring occasionally, until the cheese has melted and the soup is heated through.
