Skillet Queso Fundido con Chile Verde

Ingredients

2 cups shredded Oaxaca or mozzarella cheese

1 cup shredded Monterey Jack cheese

1 cup cooked chile verde (with tender pork pieces, optional)

½ small onion, finely diced

1 tablespoon vegetable oil

Optional: chopped fresh cilantro

Instructions

Preheat oven to 400°F (205°C). Heat an oven-safe skillet over medium heat and add vegetable oil. Sauté onion until softened and lightly golden. Spread chile verde evenly in the skillet. Sprinkle shredded cheeses evenly over the top. Transfer skillet to the oven and bake for 10–15 minutes, until cheese is fully melted and bubbling. For a lightly golden top, broil for 1–2 minutes if desired. Remove carefully from oven and garnish with fresh cilantro. Serve immediately with warm tortillas or tortilla chips.
