Ingredients
1 lb smoked sausage, sliced
4 medium potatoes, diced
2 cups fresh green beans (trimmed) or 2 cups frozen
1 small onion, chopped
2 cloves garlic, minced
2 tbsp butter or olive oil
½ cup chicken broth (optional)
1 tsp paprika
½ tsp garlic powder
Salt and pepper to taste
Instructions
In a large skillet melt butter over medium heat. Add sausage slices and brown until lightly crisp. Remove and set aside.
Add potatoes to the skillet and cook 8–10 minutes, stirring occasionally. Add onion and garlic and cook until fragrant.
Add green beans, paprika, garlic powder, salt, and pepper. Stir well.
Pour in chicken broth if using, cover skillet, and cook 8–10 minutes until potatoes are tender.
Return sausage to the skillet, stir everything together, and cook 2–3 minutes more.
Serve warm straight from the skillet.
