Strawberry Cream Cheese Frosting 🍓🍰

Ingredients:

8 oz full-fat cream cheese, softened
1 stick (1/2 cup) unsalted butter, softened
2 tsp vanilla extract
1/8 tsp salt
2-3 cups powdered sugar
1 oz freeze-dried strawberries, blended into a fine powder
2 tbsp strawberry puree or finely chopped strawberries (with or without chunks)
Directions:

Prepare the Strawberries:

Blend the freeze-dried strawberries into a fine powder using a blender or food processor. Set aside.
Puree about 3 large strawberries in a blender or food processor until smooth, leaving some small chunks if desired. Alternatively, finely chop the strawberries. Set aside.
Cream the Base:

In a mixing bowl, combine the softened cream cheese and unsalted butter. Beat with an electric mixer on medium speed for 1-2 minutes until whipped and fluffy.
Incorporate the Basics:

Add the vanilla extract, salt, and 2 cups of powdered sugar to the cream cheese mixture. Beat on low speed for 1-2 minutes, scraping down the sides of the bowl as needed, until everything is well incorporated.
Adjust Sweetness:

Taste the frosting and adjust sweetness by adding more powdered sugar if desired.
Add Strawberry Flavor:

Incorporate the freeze-dried strawberry powder and 2 tablespoons of strawberry puree or finely chopped strawberries into the frosting mixture. Beat on medium speed until fully combined.
Decorate and Store:

Use the strawberry cream cheese frosting to decorate cakes and cupcakes. Store any leftovers in a sealed container in the fridge.
