Amish Chicken Recipe
Ingredients
For the Chicken
- 4-5 lbs whole chicken or chicken pieces
- 2 cups chicken broth
- 1 large onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1/4 cup butter
- 2 tablespoons fresh parsley
- Salt and black pepper
- 1 teaspoon dried thyme
Seasoning Blend
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried rosemary
Instructions
- Pat chicken dry
- Mix seasoning blend
- Rub chicken with seasoning
- Melt butter in Dutch oven
- Brown chicken on all sides
- Add vegetables around chicken
- Pour chicken broth
- Cover and simmer 1-1.5 hours
- Check internal temperature reaches 165°F
- Let rest 10 minutes before serving
- Garnish with fresh parsley
