Amish Chicken Recipe

Ingredients

For the Chicken

  • 4-5 lbs whole chicken or chicken pieces
  • 2 cups chicken broth
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1/4 cup butter
  • 2 tablespoons fresh parsley
  • Salt and black pepper
  • 1 teaspoon dried thyme

Seasoning Blend

  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried rosemary

Instructions

  1. Pat chicken dry
  2. Mix seasoning blend
  3. Rub chicken with seasoning
  4. Melt butter in Dutch oven
  5. Brown chicken on all sides
  6. Add vegetables around chicken
  7. Pour chicken broth
  8. Cover and simmer 1-1.5 hours
  9. Check internal temperature reaches 165°F
  10. Let rest 10 minutes before serving
  11. Garnish with fresh parsley

Storage Options

  • Refrigerate: 3-4 days
  • Freeze: Up to 3 months
  • Store in airtight container
