Cherry Cheesecake Cupcakes
Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1/2 cup whole milk
1 teaspoon pure vanilla extract
1/2 cup cherry preserves
3/4 cup cream cheese, softened
1/4 cup powdered sugar
1/4 cup sour cream
1/2 cup cherries, pitted and chopped
Fresh cherries for garnish
Directions:
Prep the Oven:

Preheat your oven to 350°F (175°C).
Line a muffin tin with cupcake liners.
Mix Dry Ingredients:

In a bowl, whisk together the flour, baking powder, and salt.
Cream Butter and Sugar:

In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Combine Ingredients:

Gradually add the dry ingredients to the butter mixture, alternating with milk, beginning and ending with the dry mixture.
Stir in the vanilla extract.
Fill Cupcake Liners:

Fill each cupcake liner about two-thirds full with the batter.
Prepare Cream Cheese Mixture:

In another bowl, mix the cream cheese, powdered sugar, sour cream, and chopped cherries until well combined.
Dollop a spoonful of the cream cheese mixture on top of the batter in each cupcake liner.
Add a teaspoon of cherry preserves on top of the cream cheese mixture.
Swirl and Bake:

Use a toothpick or knife to gently swirl the cherry preserves into the cream cheese mixture.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool completely.
Frost and Garnish:

Pipe or spread additional cream cheese frosting on top of each cooled cupcake.
Garnish with fresh cherries.
