Country Ranch Green Beans and Potatoes with Bacon
👉 Ingredients:
1 lb fresh green beans, trimmed and cut
4 cups baby potatoes (or 4 large, peeled and diced)
6 slices bacon, chopped
1 onion, diced
2 cloves garlic, minced
1 packet (1 oz) ranch seasoning mix
1 cup chicken broth
1/2 tsp dried thyme
1/2 tsp dried rosemary
Salt and pepper, to taste
2 tbsp olive oil (optional)
👉 Instructions:
1. Cook Bacon: In a large skillet, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving drippings.
2. Sauté Aromatics: In the same skillet, add onion and cook until softened (about 5 minutes). Add garlic and cook for 1 more minute.
3. Cook Potatoes: Add diced potatoes and cook, stirring occasionally, until they start to brown (about 5-7 minutes).
4. Add Green Beans: Stir in green beans, ranch seasoning, thyme, and rosemary. Pour in chicken broth and bring to a simmer.
5. Simmer: Cover and reduce heat to low. Cook for 15-20 minutes, until vegetables are tender.
6. Finish Dish: Stir in cooked bacon and adjust seasoning with salt and pepper as needed.
