4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons unsalted butter

3 large onions, thinly sliced

2 cloves garlic, minced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 cup shredded Swiss or provolone cheese

Instructions

Season the chicken breasts with salt and black pepper. Heat olive oil in a large skillet over medium heat and sear the chicken on both sides until golden, then remove and set aside. In the same skillet, melt the butter and add the sliced onions. Cook over medium-low heat, stirring occasionally, for 25–30 minutes until deeply caramelized. Add the garlic and cook for 30 seconds. Pour in the beef broth, Worcestershire sauce, and thyme, scraping up any browned bits from the pan. Return the chicken to the skillet, cover, and simmer for 10–15 minutes until the chicken is cooked through. Sprinkle the cheese over the chicken and onions, cover, and cook until the cheese is melted. Serve hot.
