Fried Rice
Ingredients:
2 cups long-grain rice
2 cups water
2 cups vegetable broth
1/2 tsp salt
2 tsp vegetable oil
2 large eggs, whisked
1/3 cup frozen peas and carrots
2 tbsp scallions, thinly sliced
1/2 tsp sesame oil
Instructions:
Cook the Rice:
Rinse the rice thoroughly and place it in a pot with water, vegetable broth, and salt.
Bring to a boil, then reduce the heat to low. Cover and simmer for 20 minutes.
Remove from heat and let it sit for 10 minutes, then cool in the refrigerator for 1-2 hours.
Prepare the Fried Rice:
Heat a wok over high heat and add the vegetable oil.
Pour in the whisked eggs, stirring until they are fully cooked.
Add the frozen peas, carrots, and scallions to the wok. Stir-fry for a couple of minutes.
Mix in the cooled rice and drizzle with sesame oil. Stir until everything is well combined and heated through.
