4 catfish fillets

2 tablespoons olive oil

For the Dirty Rice

1 cup long-grain rice

2 cups chicken broth

1/2 lb ground beef

1/2 small onion, finely chopped

1/2 bell pepper, finely chopped

2 cloves garlic, minced

1 teaspoon Cajun seasoning

Salt and pepper to taste

For the Green Beans

1 lb fresh green beans, trimmed

1 tablespoon butter

1 tablespoon olive oil

1 clove garlic, minced

Salt, black pepper, and red pepper flakes (optional)

For the Cheddar Bay Biscuits

1 cup biscuit baking mix

1/2 cup shredded cheddar cheese

1/3 cup milk

2 tablespoons melted butter

1/2 teaspoon garlic powder

1/2 teaspoon dried parsley

Instructions

Season the catfish with olive oil, paprika, garlic powder, onion powder, cayenne, salt, and pepper. Grill over medium heat for 3–4 minutes per side until flaky and lightly charred. Set aside and rest with lemon wedges.

Cook rice in chicken broth according to package instructions. In a skillet, brown ground beef with onion and bell pepper until fully cooked. Add garlic and Cajun seasoning, then stir in cooked rice and adjust seasoning.

Sauté green beans in butter and olive oil over medium heat until tender-crisp. Add garlic, salt, pepper, and red pepper flakes if using.

Mix biscuit ingredients, drop spoonfuls onto a baking sheet, and bake at 425°F (220°C) for 10–12 minutes until golden. Brush with extra melted butter before serving.
