Hearty 5-Ingredient Casserole

Another great thing about this casserole is that it works for both quick weeknight meals and cozy weekend dinners. It cooks in one pot, requires very little prep, and has a rustic, old-fashioned charm that makes it perfect for feeding a family or meal prepping for the week. The potatoes absorb the juices from the meat and vegetables as they simmer, becoming soft, buttery, and full of flavor. Meanwhile, the bell peppers give the dish color and a slight sweetness that balances the savory beef. You can season it with basic pantry spices like garlic powder, paprika, oregano, or even taco seasoning for a different twist, but the base recipe stays wonderfully simple.

This casserole is also very flexible. You can use any type of potato, fresh or canned tomatoes, any color of bell peppers, or even swap the beef for turkey. Serve it alone, with rice, or beside warm bread—no matter how you enjoy it, the result is always comforting and satisfying. It’s the perfect example of how five humble ingredients can create a wholesome, flavorful dish that feels like home.

Ingredients

1 lb ground beef

3–4 medium potatoes, peeled and cubed

1 large onion, chopped

1–2 bell peppers, chopped

1 can diced tomatoes or 2 fresh tomatoes, chopped

1 tsp garlic powder

1 tsp paprika

1 tsp dried oregano

Salt and pepper to taste

1 cup beef broth or water

Instructions

Brown the ground beef in a deep skillet or pot, seasoning with salt, pepper, garlic powder, paprika, and oregano.

Add the onions and bell peppers, cooking 3–4 minutes until softened.

Stir in the potatoes and tomatoes.

Pour in beef broth or water and mix well.

Cover and simmer on medium-low for 25–35 minutes, stirring occasionally, until potatoes are tender and flavors are combined.
