Mandarin Orange Salad

1 bag (10 ounces) spring mix or spinach
1 can (11 ounces) mandarin oranges
1/2 cup dried cranberries
1/3 cup sliced almonds, walnuts, or pecans
Orange Dressing:
1/4 cup frozen orange juice concentrate (undiluted)
1/2 teaspoon orange zest
1/4 cup olive or vegetable oil
2 tablespoons granulated sugar
1 tablespoon apple cider vinegar (preferred)
1/2 tablespoon lemon juice
1 teaspoon poppy seeds
1/4 teaspoon kosher salt

Preparation Steps

Combine Ingredients: In a large bowl, mix the spring mix, mandarin oranges, cranberries, and your choice of nuts.
Prepare the Dressing: In a mason jar, combine the orange juice concentrate, orange zest, oil, sugar, vinegar, lemon juice, and salt. Shake well. Add poppy seeds and shake again just before serving.
Dress the Salad: Drizzle the dressing over the salad and toss until evenly coated.
