Peanut Butter Lunch Lady Cookie Bars

Equipment:

✔ 9×13-inch baking pan

✔ Large mixing bowl

✔ Electric mixer (or whisk)

✔ Measuring cups & spoons

✔ Spatula

 

Ingredients:

For the Cookie Bars:

✔ 1 cup unsalted butter, softened

✔ 1 cup granulated sugar

✔ 1 cup brown sugar, packed

✔ 1 ½ cups creamy peanut butter

✔ 2 large eggs

✔ 2 tsp vanilla extract

✔ 2 cups all-purpose flour

✔ 1 tsp baking soda

✔ ½ tsp salt

For the Frosting:

✔ ½ cup unsalted butter, softened

✔ ½ cup creamy peanut butter

✔ 2 cups powdered sugar

✔ ¼ cup milk

✔ 1 tsp vanilla extract

 

Instructions:

1️⃣ Preheat & Prep: Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.

2️⃣ Cream Butter & Sugars: In a large bowl, beat together butter, granulated sugar, and brown sugar until fluffy.

3️⃣ Add Peanut Butter & Eggs: Mix in the peanut butter, eggs, and vanilla extract until smooth.

4️⃣ Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture and mix until just combined.

5️⃣ Bake: Spread the dough evenly into the prepared pan. Bake for 20-25 minutes, or until golden brown and set. Let cool slightly.

6️⃣ Make the Frosting: Beat together butter, peanut butter, powdered sugar, milk, and vanilla until smooth and creamy.

7️⃣ Frost the Bars: Spread the frosting over the warm bars, allowing it to slightly melt into them for extra softness.

8️⃣ Cool & Serve: Let the bars cool completely before slicing into squares. Enjoy!
