Sautéed Zucchini and Mushrooms
Ingredients:
2 tablespoons olive oil
1 large onion, thinly sliced
2 cloves garlic, minced
1 pound mushrooms, sliced
3 medium zucchinis, sliced into half-moons
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Heat the Oil:
In a large skillet, heat the olive oil over medium heat.
Cook the Onion:
Add the sliced onion and cook until softened, about 5 minutes.
Add the Garlic:
Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
Cook the Mushrooms:
Add the sliced mushrooms and cook until they release their juices and start to brown, about 5-7 minutes.
Add the Zucchini:
Stir in the sliced zucchini. Sprinkle with dried thyme, dried oregano, red pepper flakes (if using), salt, and pepper.
Cook the Zucchini:
Cook until the zucchini is tender but still crisp, about 5-7 minutes, stirring occasionally to ensure even cooking.
Garnish and Serve:
Garnish with fresh parsley before serving.
