Slow Cooker Country Green Beans with Potatoes & Smoked Meat

What sets country-style green beans apart from regular green beans is that they’re not crisp or lightly sautéed. These are meant to be soft, rich, and full of smoky flavor. Southern cooks call this “cooked down,” and it’s exactly what gives the dish its charm. Over several hours, the meat softens, the potatoes become creamy inside, and the flavors meld into a stew-like mixture that tastes like pure comfort.

This dish works beautifully alongside cornbread, barbecue, fried chicken, pot roast, or simply as a main meal by itself. You can use ham hocks for a richer broth, smoked turkey for a lighter flavor, or smoked sausage for a heartier version. No matter the variation, slow cooker green beans with potatoes and smoked meat are the definition of home-style comfort.

Ingredients

2 lbs fresh green beans, trimmed

1½ lbs baby potatoes (whole or halved)

1–1½ lbs smoked meat (ham hock, smoked turkey, bacon, or smoked pork)

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken broth or water

1 tsp black pepper

½ tsp salt (adjust to taste)

½ tsp paprika

1 tbsp butter

Instructions

Add green beans, potatoes, smoked meat, onion, and garlic to the slow cooker.

Pour broth or water over everything.

Season with pepper, salt, and paprika. Add butter.

Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until green beans are tender and potatoes are soft.

Remove smoked meat, shred or chop, and return to the pot.

Taste and adjust seasoning. Serve warm with cornbread.
