Ingredients

  • 2 cups fresh radishes (thinly sliced)
  • 1/2 cucumber (thinly sliced)
  • 2 tablespoons fresh dill (chopped)
  • 2 tablespoons fresh parsley (chopped)
  • 1/4 small red onion (thinly sliced)

For the dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • Salt and black pepper to taste

Instructions

  1. Wash and thinly slice the radishes, cucumber, and red onion.
  2. In a large bowl, combine radishes, cucumber, onion, dill, and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to coat.
  5. Let it sit for 10–15 minutes before serving to allow flavors to blend.
