
Ingredients
For the Salad:
•12 oz rotini or elbow macaroni pasta
•1 lb ground beef or ground turkey
•1 packet taco seasoning (or homemade taco seasoning)
•1 cup cherry tomatoes, halved
•1 cup red bell pepper, diced
•1 cup corn kernels (fresh, frozen, or canned)
•1 cup shredded cheddar cheese
•½ cup red onion, finely chopped
•1 cup black beans, drained and rinsed
•1 cup chopped iceberg lettuce (optional)
•½ cup cilantro, chopped (optional)
For the Dressing:
•½ cup sour cream
•¼ cup mayonnaise
•2 tbsp lime juice
•1 tbsp taco seasoning (or to taste)
•1 tbsp olive oil
•Salt and pepper, to taste
Instructions
1.Cook the Pasta – Cook the pasta according to package directions. Drain and rinse with cold water to cool it down. Set aside.
2.Cook the Meat – In a large skillet, brown the ground beef or turkey over medium heat, breaking it apart as it cooks. Once browned, drain any excess fat and stir in the taco seasoning with a bit of water (as directed on the seasoning packet). Set aside to cool slightly.
3. Make the Dressing – In a small bowl, whisk together sour cream, mayonnaise, lime juice, taco seasoning, and olive oil until smooth. Add salt and pepper to taste.
4. Assemble the Salad – In a large bowl, combine the cooked pasta, seasoned meat, tomatoes, bell pepper, corn, black beans, red onion, and shredded cheddar cheese.
5.Toss with Dressing – Pour the dressing over the salad and toss everything until well-coated.
6.Garnish & Serve – Top with chopped lettuce, cilantro, or extra cheese if desired. Serve chilled or at room temperature.
