Wonton Soup
Ingredients:

Wontons:

8 ounces plant-based ground meat substitute
1 tbsp. rice wine vinegar
1 tbsp. soy sauce, vegan
1 tsp. sesame oil
1 tsp. fresh ginger, grated
1 tsp. brown sugar
2 green onions, finely chopped
24 square (3½ inches each) vegan wonton wrappers
Soup:

6 cups vegetable broth
1½ tsp. garlic, minced
2 tbsp. soy sauce, vegan
1 tsp. sesame oil
2-3 green onions, finely chopped
Step-by-Step Directions:

Wontons:

Prepare the Filling:
In a large bowl, combine plant-based ground meat substitute, rice wine vinegar, soy sauce, sesame oil, grated ginger, brown sugar, and finely chopped green onions. Mix well.
Fill the Wontons:
Place 1 heaping teaspoon of filling into the center of each vegan wonton wrapper. Moisten the edges with water. Fold the corners together to form a triangle, pressing out any excess air.
Seal the Wontons:
Lift the long edge of the wonton, wrap the edges in opposite directions, and press firmly to seal. Wet the edges as needed for a secure seal. Repeat with remaining wonton wrappers.
Rest the Wontons:
Allow prepared wontons to rest while you prepare the soup.
Soup:

Prepare the Broth:
In a medium pot over medium heat, add vegetable broth, minced garlic, soy sauce, sesame oil, and chopped green onions. Stir well and bring to a gentle simmer.
Cook the Wontons:
In a separate large pot, bring about 4 quarts of water to a boil. Carefully add vegan wontons and cook for 5 minutes or until they float to the surface and are cooked through.
Combine and Serve:
Strain cooked wontons and add to the warm broth mixture. Serve the soup warm, garnished with additional chopped green onions if desired.
