🎃 Ingredients:
1 cup almond meal/flour
3 tbsp sugar or sugar-free sweetener
1/2 tbsp baking powder
1/4 tsp salt
1/2 tsp cinnamon or pumpkin pie spice
1/3 cup pumpkin puree
1 egg (or flax egg)
Optional: mini chocolate chips
🎃 Instructions:
1️⃣ Preheat oven to 350°F and grease a mini muffin tin.
2️⃣ Mix dry ingredients in a bowl, then whisk in wet ingredients.
3️⃣ Divide batter among muffin cups.
4️⃣ Bake for 10 mins (or 15 mins for regular muffins).
5️⃣ Let cool, then gently pop out of the tin.
