Ingredients for the Dough:
1 stick butter, softened
1/2 cup sugar
2 teaspoons vanilla extract

Ingredients for the Rolls:
1 1/4 cups all-purpose flour
1 1/4 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
6-7 sheets honey graham crackers (about 1 cup or 90 grams, depending on crumb size)
1 1/2 teaspoons ground cinnamon
1 cup butter, room temperature
3/4 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup semi-sweet chocolate chips
1/2 cup roughly chopped milk chocolate
2 cups mini marshmallows
Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a baking dish or line with parchment paper.
Prepare Dough:
In a large bowl, cream together 1 stick of softened butter and 1/2 cup of sugar until light and fluffy.
Add 2 teaspoons vanilla extract and 2 large eggs, beating well after each addition.
Stir in 1/2 teaspoon baking powder and 1 1/4 cups all-purpose flour until well combined. Set aside.

Stir in 1 1/2 teaspoons ground cinnamon.
Combine Ingredients:
Cream together 1 cup room temperature butter and 3/4 cup brown sugar until light and fluffy.
Add 2 large eggs, one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract.
Gradually add the flour mixture to the butter mixture, mixing until just combined.
Fold in 2/3 cup semi-sweet chocolate chips, 1/2 cup roughly chopped milk chocolate, and 2 cups mini marshmallows.
Assemble Rolls:
Spread half of the dough mixture into the prepared baking dish.
Evenly spread the ricotta filling over the dough layer.
Next, spread the poppy seed filling over the ricotta layer.
Top with the remaining dough mixture, spreading evenly.
Bake:
Bake in the preheated oven for 25-30 minutes, or until golden brown and set in the center.
Let cool slightly before serving.
Serve:
