Cheesy Tater Tot Meatloaf Casserole
Ingredients:
1 cup ketchup
1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
2 lbs lean ground beef
30 Ritz crackers, crushed
2 oz Lipton onion soup mix
2 large eggs
24 oz frozen tater tots
2 cups shredded mozzarella and cheddar cheese blend
1/4 cup real bacon bits

Directions:
Preheat Your Oven:
Preheat your oven to 350°F (175°C) to ensure even cooking.
Prepare the Sauce:
In a small mixing bowl, combine 1 cup of ketchup and 1 cup of Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce. Stir until smooth and set aside.
Mix the Meatloaf Ingredients:
In a large mixing bowl, combine 2 lbs of lean ground beef, 30 crushed Ritz crackers, 2 oz of Lipton onion soup mix, 2 large eggs, and 1/2 cup of the ketchup and barbecue sauce mixture. Mix thoroughly with your hands until well combined.
Shape the Meatloaf:
Grease a 9 x 13-inch baking dish. Press the meatloaf mixture evenly into the dish to cover the entire bottom.
Add the Sauce:
Spread the remaining ketchup and barbecue sauce mixture evenly over the top of the meatloaf for a delicious glaze.
Arrange the Tater Tots:
Place the frozen tater tots in a single layer on top of the sauce-covered meatloaf for even cooking and crispiness.
Add the Cheese and Bacon:
Sprinkle 2 cups of shredded mozzarella and cheddar cheese blend over the tater tots. Top with 1/4 cup of real bacon bits for extra flavor.
Bake the Casserole:
Cover the baking dish with aluminum foil to prevent the cheese from burning. Bake in the preheated oven for 35 minutes. After 35 minutes, remove the foil and continue baking for an additional 40 minutes, or until the ground beef is thoroughly cooked.
Let It Rest:
Once baked, remove the casserole from the oven and let it rest for a few minutes to make slicing easier.
