Ingredients:
•1.5 pounds ground beef (80/20 or leaner)
•1 large yellow onion, finely diced
•4 pounds Russet potatoes, peeled and sliced 1/4-inch thin
•2 cups grated cheddar cheese
•1 (10.75 oz) can condensed cheddar soup
•1 (12 oz) can evaporated milk
•1/2 cup milk
•1/2 teaspoon garlic powder

Instructions:
Step 1: Prepare the Ground Beef Mixture
1.Preheat oven to 350°F (175°C).
2.In a large skillet, cook the ground beef and diced onion over medium-high heat until the beef is browned, breaking it into small pieces as it cooks.
3.Season with salt, pepper, and garlic powder. Drain excess fat.
Step 2: Layer the Casserole
1.In a greased 9×13-inch baking dish, arrange a layer of potatoes.
2.Top with a quarter of the ground beef mixture and a quarter of the cheddar cheese.
3.Repeat this layering process three more times, ending with a layer of potatoes on top.
Step 3: Prepare the Creamy Sauce
1.In a bowl, whisk together the cheddar soup, evaporated milk, milk, and garlic powder until smooth.
2.Pour the sauce over the layered ingredients in the baking dish.
Step 4: Bake the Casserole
1.Cover the dish with foil and bake for 60 minutes.
2.Remove the foil and continue baking for an additional 15 minutes, or until the top is golden brown and bubbly.
Step 5: Serve
1.Remove from the oven and let cool slightly.
2.Garnish with fresh parsley if desired.
3.Serve warm and enjoy!
Tips:
•Use a mandoline to slice the potatoes thinly for even cooking.
•If using a leaner ground beef, ensure not to overcook to prevent dryness.
•Consider adding other spices like paprika or thyme to enhance the flavor of the beef mixture.
•Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
