1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 cups potatoes, thinly sliced (or cooked pasta/rice)
1 can (10.5 oz) cream of mushroom or cream of chicken soup
1/2 cup milk
1 cup shredded cheddar cheese
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp Italian seasoning
1 tbsp olive oil
Instructions
Preheat your oven to 375°F (190°C). Heat olive oil in a skillet over medium heat. Add diced onion and cook until softened, then add garlic and ground beef. Cook until the beef is browned and fully cooked, breaking it apart as it cooks. Season with salt, pepper, paprika, and Italian seasoning. In a bowl, mix the soup and milk until smooth. Grease a baking dish and layer the sliced potatoes evenly at the bottom. Spread the cooked ground beef mixture over the potatoes. Pour the soup mixture evenly on top, then sprinkle shredded cheddar cheese over everything. Cover with foil and bake for 40 minutes. Remove the foil and bake an additional 15–20 minutes until the cheese is bubbly and golden and the potatoes are tender. Let rest for 5 minutes before serving.
