
Ingredients:
2 lbs fresh strawberries, sliced
2 (8 oz) blocks cream cheese, softened
1 cup powdered sugar
2 teaspoons vanilla extract
2 cups heavy whipping cream
1 box graham crackers
In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla, beating until fluffy. In a separate bowl, whip the heavy cream to stiff peaks. Fold the whipped cream into the cream cheese mixture until fully combined. Spread a thin layer of the cream mixture into the bottom of a 9×13-inch dish. Layer graham crackers over the cream. Spread a third of the remaining cream over the crackers, then add a layer of sliced strawberries. Repeat layers two more times, ending with strawberries on top. Cover and refrigerate for at least 6 hours or overnight.
Try substituting raspberries or blueberries for the strawberries or adding lemon zest to the cream mixture for a citrus twist. For a chocolate version, use chocolate graham crackers and drizzle melted chocolate between layers.
