Lemony White Chocolate Cheesecake
Description
A luxurious combination of smooth white chocolate and bright lemon flavors in a creamy cheesecake with a buttery graham cracker crust.
Ingredients
Crust

2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
Pinch of salt

Filling

24 oz (3 packages) cream cheese, softened
12 oz white chocolate, melted and slightly cooled
1 cup granulated sugar
3 large eggs, room temperature
1/4 cup fresh lemon juice
2 tablespoons lemon zest
1 teaspoon vanilla extract
1/4 cup heavy cream

Topping (Optional)

White chocolate shavings
Lemon zest
Fresh berries
Whipped cream

Instructions
Crust Preparation

Preheat oven to 325°F (165°C)
Grease a 9-inch springform pan
Mix graham cracker crumbs, melted butter, sugar, and salt
Press mixture into bottom and slightly up sides of pan
Bake for 10 minutes
Cool completely

Cheesecake Filling

Reduce oven to 300°F (150°C)
Beat cream cheese until smooth
Gradually add sugar, beating until fluffy
Pour in melted white chocolate, mix until combined
Add eggs one at a time, mixing on low speed
Stir in:

Lemon juice
Lemon zest
Vanilla extract
Heavy cream

Pour filling over cooled crust

Baking

Place springform pan in a large roasting pan
Fill roasting pan with hot water halfway up sides of springform pan
Bake for 60-70 minutes until edges are set but center jiggles slightly
Turn off oven, crack door open
Let cheesecake cool in oven for 1 hour
Remove from water bath, cool completely
Refrigerate for at least 6 hours or overnight
