No Bake Chocolate Oat Bars
Ingredients:
1 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick-cooking oats
1 cup semisweet chocolate chips
1/2 cup peanut butter
Instructions:
Prepare the Pan:
Grease a 9×9-inch square pan.
Cook the Oats Mixture:
In a large saucepan over medium heat, melt the butter.
Stir in the brown sugar and vanilla extract until well combined.
Add the oats and cook over low heat for 2 to 3 minutes, stirring until the ingredients are well blended.
Press half of the oat mixture into the bottom of the prepared pan. Reserve the other half for the topping.
Make the Chocolate Layer:
In a small, heavy saucepan over low heat, melt the chocolate chips and peanut butter, stirring frequently until smooth.
Pour the chocolate mixture over the pressed oat crust in the pan, spreading it evenly with a knife or the back of a spoon.
Add the Topping:
Crumble the remaining oat mixture over the chocolate layer, pressing it gently into place.
Chill and Serve:
Cover the pan and refrigerate for 2 to 3 hours or overnight.
Bring to room temperature before cutting into bars.
