SLOW COOKER POT ROAST

Servings: 6-8

🥘 Ingredients:
Meat & Veggies: 3 lb chuck roast, 3 lbs potatoes (quartered), 2 lbs carrots (quartered), 1 tsp onion powder or 1 sliced onion, 3 tsp minced garlic (optional), ½ cup prepared horseradish.
Liquid & Searing: 4 cups beef stock, oil for searing.
Gravy: 2 tbsp flour, 2 tbsp butter, 2 cups cooking liquid.

🥘 Instructions:
Sear Meat: Season and brown chuck roast in a pan.
Layer Veggies: Place potatoes and carrots in slow cooker. Add onions and garlic if using.
Assemble Roast: Add roast on top, spread horseradish, and pour beef stock around it.
Cook: Set slow cooker on low for 8-10 hours or high for 4-6 hours until meat is tender.
Make Gravy: Use cooking liquid, butter, and flour to make a roux-based gravy.
Serve the tender roast with thick gravy and enjoy a taste of home in every bite!
