Strawberry Icebox Pie 🍓🥧

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Filling:

2 cups fresh strawberries, hulled and sliced
1/2 cup granulated sugar
1 tbsp lemon juice
1 1/2 cups heavy cream
1 (14 oz) can sweetened condensed milk
1 (8 oz) package cream cheese, softened
1 tsp vanilla extract
For the Topping:

1 cup fresh strawberries, hulled and sliced
Whipped cream (optional, for serving)
Directions:

Prepare the Crust:

Preheat your oven to 350°F (175°C).
In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
Bake for 8-10 minutes, until lightly golden. Remove from the oven and let cool completely.
Make the Strawberry Mixture:

In a medium saucepan, combine 2 cups of sliced strawberries, granulated sugar, and lemon juice.
Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens slightly, about 5-7 minutes.
Remove from heat and let cool completely.
Prepare the Filling:

In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the sweetened condensed milk and vanilla extract, and mix until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until fully combined.
Assemble the Pie:

Spread half of the cream cheese mixture into the cooled graham cracker crust.
Spoon the cooled strawberry mixture over the cream cheese layer.
Top with the remaining cream cheese mixture, spreading it evenly.
Chill:

Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight, to set.
Serve:

Before serving, top the pie with the remaining fresh strawberries.
Add a dollop of whipped cream, if desired.
Slice and enjoy your strawberry icebox pie chilled.
