Mini Apple Pecan Fritter Bites
Ingredients:
1 cup (128g) all-purpose flour
2 teaspoons baking powder
½ teaspoon cinnamon
½ teaspoon salt
2 teaspoons fresh lemon juice
2 -3 cups Granny Smith apples, peeled, cored, and diced into bite-size pieces (about 2-3 apples)
2 tablespoons granulated sugar
2 large eggs, room temperature
¼ cup (61g) whole milk
Vegetable or canola oil, for frying
For the Glaze:
1 ¼ cups (150g) confectioners sugar, sifted
¼ teaspoon vanilla extract
3-6 teaspoons water
Instructions:
Prepare the Apple Fritter Batter:
In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.
In a separate bowl, toss the diced apples with lemon juice. Set aside.
Using a stand mixer fitted with the paddle attachment, beat together the sugar and eggs on medium speed until well combined.
Reduce the mixer speed to low and gradually add the flour mixture in two additions, mixing until just combined.
Pour in the milk and continue to mix until smooth.
Gently fold in the prepared apples until evenly distributed.
Fry the Fritters:
Fill a frying pan halfway with vegetable or canola oil and heat over medium heat until it reaches 375°F (190°C) using a candy thermometer.
Carefully drop ¼ cup of batter into the hot oil, allowing it to fry until golden brown on one side. Then, flip and fry until the other side is golden brown.
Use a knife to check for doneness; if the center is still uncooked, fry for a bit longer.
Once cooked, transfer the fritters to a paper towel-lined cooling rack to drain excess oil. Repeat the frying process with the remaining batter.
Prepare the Glaze:
In a small bowl, whisk together the sifted confectioners sugar, vanilla extract, and 3 teaspoons of water until smooth.
Add more water, 1 teaspoon at a time, until the glaze reaches a pourable consistency.
Glaze the Fritters:
Drizzle the prepared glaze over the cooled fritters using a spoon or piping bag.
Allow the glaze to set and dry before serving.
