Ingredients
For the Swedish Meatballs:
2 Tablespoons olive oil, divided
1 onion, diced
1 pound lean ground beef
1 pound ground pork
1/2 cup breadcrumbs
2 large egg yolks
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 1/2 teaspoon kosher salt
3/4 teaspoon fresh ground black pepper

For the Gravy:
1/4 cup unsalted butter
1/3 cup all-purpose flour
3 3/4 cups low-sodium beef broth
3/4 cup sour cream
Kosher salt and freshly ground black pepper, to taste
2 Tablespoons fresh chopped parsley, for garnish

For Serving:
1 lb egg noodles, cooked (or cooked rice)

Instructions
Sauté the Onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 2-3 minutes. Set aside.
Prepare the Meatballs: In a large bowl, combine ground beef, ground pork, breadcrumbs, egg yolks, allspice, nutmeg, and the cooked onion. Season with salt and pepper. Mix well, then roll the mixture into 1 1/2-inch meatballs (about 20-24 meatballs).
Cook the Meatballs: Add the remaining olive oil to the skillet. Cook the meatballs in batches until browned on all sides, about 4-5 minutes. Transfer to a plate lined with paper towels.
Make the Gravy: Melt butter in the skillet. Whisk in flour until lightly browned. Gradually whisk in beef broth and cook until slightly thickened. Stir in sour cream, then season with salt and pepper.
Combine and Cook: Return the meatballs to the skillet with the gravy. Cook, stirring occasionally, until the meatballs are heated through and the gravy is thickened, about 8-10 minutes.
Serve: Garnish with chopped parsley. Serve the meatballs and gravy over cooked egg noodles or rice.

Notes
Make Ahead: Cook meatballs ahead of time and refrigerate or freeze until ready to use.
Freezing: Cooked meatballs can be frozen. Thaw in the fridge before reheating.
Variations: Try using all beef or a mix of beef and ground turkey for the meatballs.
Crock Pot Method: After browning, combine meatballs and sauce (minus sour cream) in a crockpot and cook on low for 2-3 hours. Add sour cream before serving.
Using Frozen Meatballs: Brown frozen meatballs if desired, then simmer in the sauce until heated through.
