Spinach Feta Pinwheels
Ingredients:
1 egg, whisked with 1 tablespoon of water
½ cup crumbled feta (preferably from a block)
¼ cup grated mozzarella
1 green onion, chopped
½ teaspoon garlic salt
A few grates of fresh nutmeg
1 (10-ounce) package frozen chopped spinach, defrosted and squeezed dry
1 puff pastry sheet, defrosted (preferably made with butter, like Dufour)
Directions:
Prepare the Egg Wash:

Whisk together the egg and water, then set aside.
Mix the Filling:

In a bowl, combine the crumbled feta, grated mozzarella, chopped green onion, garlic salt, and a few grates of fresh nutmeg.
Prepare the Puff Pastry:

Roll out the puff pastry sheet on a lightly floured surface to smooth out the seams.
Brush the entire surface with the egg wash.
Assemble the Pinwheels:

Evenly spread the cheese mixture over the pastry.
Break apart the spinach and distribute it evenly over the cheese mixture, leaving about an inch of one short side uncovered.
Roll and Slice:

Starting from the short side covered with filling, roll the pastry tightly into a jellyroll shape.
Slice the roll into ½-¾ inch thick slices.
Prepare for Baking:

Line two baking sheets with parchment paper and place the slices on them.
Chill the pinwheels in the refrigerator or freezer while preheating the oven to 400°F (200°C).
Bake:

Bake the pinwheels for 15 minutes or until they are golden brown.
Serve:
