Tater Tot Crust Quiche

Ingredients

2 cups frozen tater tots

6 large eggs

1 cup milk or half-and-half

1½ cups shredded cheese (cheddar, Swiss, or Colby Jack)

1 cup cooked bacon, sausage, or ham, chopped

½ cup diced onion

½ cup diced bell pepper or spinach

½ teaspoon salt

½ teaspoon black pepper

Instructions

Preheat oven to 400°F (205°C). Grease a pie dish or quiche pan. Arrange frozen tater tots evenly in the dish and bake for 15 minutes. Remove from oven and gently press tots down to form a crust along the bottom and sides. Reduce oven temperature to 375°F (190°C). In a bowl, whisk eggs, milk, salt, and pepper. Sprinkle cheese, meat, and vegetables evenly over the tater tot crust. Pour egg mixture on top. Bake for 30–35 minutes, until the center is set and the top is lightly golden. Let rest 5–10 minutes before slicing and serving.
