Ingredients

For the Meatballs:

•1 lb ground pork (or chicken)

•2 cloves garlic, minced

•1 small shallot, finely chopped

•1 tbsp fish sauce

•1 tbsp soy sauce

•1 tsp sugar

•1/2 tsp black pepper

•1 tsp cornstarch

•1 tbsp chopped fresh cilantro

•1 tbsp chopped green onions

•1 tsp sesame oil

•1/2 tsp chili flakes (optional)

•1 tbsp vegetable oil (for frying)

For the Salad:

•4 cups mixed greens (lettuce, cabbage, or spinach)

•1 cup shredded carrots

•1 cucumber, julienned

•1/4 cup fresh mint leaves

•1/4 cup fresh cilantro leaves

•1/4 cup crushed peanuts

For the Dressing:

•3 tbsp fish sauce

•2 tbsp lime juice

•1 tbsp rice vinegar

•1 tbsp sugar

•1 clove garlic, minced

•1 tsp chili flakes (optional)

Instructions

1. Prepare the Meatballs:

•In a bowl, mix all the meatball ingredients (except oil) until well combined.

•Roll into small meatballs (about 1-inch in diameter).

•Heat oil in a pan over medium heat and cook the meatballs, turning occasionally, until golden brown and cooked through (about 8-10 minutes).

2. Make the Dressing:

•Whisk together all dressing ingredients in a small bowl until the sugar is dissolved.

3. Assemble the Salad:

•In a large bowl, combine the mixed greens, carrots, cucumber, mint, and cilantro.

•Top with the cooked meatballs and drizzle with the dressing.

•Sprinkle with crushed peanuts for added crunch.

4. Serve & Enjoy!

•Toss everything together and serve immediately!
